Serving: 2 |Type: Alternative to Rice
Ingredients:
| Quiona cooked | -1 cup |
| Mixed vegetables | -1 cup |
| Onion diced | -1/2 cup |
| Tomato diced | -1/2 cup |
| Turmeric | -1/4 tsp |
| Chili powder | -1/2 tsp |
| Coriander powder | -1/2 tsp |
| Coriander leaves | -2 tbsp (chopped) |
| Mint leaves | -2 tbsp (chopped) |
| Salt | -to taste |
Seasoning:
| Ani seed (sombu) | -1/4 tsp |
| Cloves | -3 |
| Cinnamon | -1 inch |
| Bay leaf | -1 |
| Black Stone Flower (Kal Pasi) | -few |
| Green chili | -3 (slit) |
| Ginger & Garlic paste | -1/2tbsp |
| Oil & Ghee | -3tbsp (total) |
Method:
- In a pan heat oil and add all of the seasonings one by one.
- Then add onion sauté well about 1minute.
- Now add mixed vegetables and fry it for about 2 minutes.
- Then add tomato, turmeric powder and salt sauté well until tomato gets smashed.
- Add masala powders and mint leaves and close the pan with a lid until all the vegetables are cooked well, its take about 3 minutes on medium flame.
- Then add cooked quiona and mix well, let it cook for 2 minutes then turn of the stove.
- Garnish with coriander leaves.
- Eat with Raitha or kurma.
Note:
- Mixed vegetables like carrot, beans, peas, cauliflower and corn
- Quiona can be used as a replaced of rice.
- You can add garam masala about 1 tsp.
