Ingredients:
| Okra (3/4 in cut) | -2 lbs |
| Oil | -for deep frying |
Seasoning:
| Oil | -1 tbsp |
| Mustard | -1 tsp |
| Urad Dhal | -1 tsp |
| Cumin | -1 tsp |
| Asafotida | -¼ tsp |
| Curry Leaves | -few |
| Red Chili | -1 |
| Green Chili | -1 |
| Red Chili Powder | -2 tsp |
| Turmeric Powder | -1/4 tsp |
| Salt | -to taste |
| Cashew Nuts | -10 |
| Roasted Peanuts (coarsely powdered) | -2 tbsp |
Method:
- Cut Okra
- Fry Okra
- Set it aside
- Add seasoning, followed by Okra
- Ready to eat!
- In a deep pan, heat the oil for deep frying and fry the okra and place in on a tissue paper to drain off the excess oil.
- Keep it aside.
- Next in another pan, heat with oil and then add mustard seeds, allow it to splutter.
- Next add the urad dhal, cumin, red chili, green chili and asafotida.
- Then add the cashew nuts and let it get golden brown.
- Then add turmeric powder, chili powder and salt.
- Now add the fried okra and mix everything well.
- Then let it cook for two minutes and then sprinkle ¼ cup of water and cook for another two minutes.
- Finally add the coarsely powdered roasted peanuts and mix well.
- Remove from heat and serve with rice.
Note:
- If you want, you can add ½ cup of chopped onion.
