Ingredients:
| Egg Plant | -2(small) |
| Beans | -10 |
| Carrot | -1 |
| Potato | -1(small) |
| Drumstick | -1 |
| Peas | -¼cup |
| Raw Banana | -1(small) |
| White pumpkin | -½ cup |
| Yogurt | -1cup |
| Salt | -to taste |
| Coconut Oil | -2tbsp |
| Curry Leaves | -few |
Grinding:
| Grated coconut | -½ cup |
| Green Chili | -4 to6 |
| Cumin | -1tsp |
| Rice flour | -1tbsp |
Method:
- Cut all the vegetables like lengthwise(2 inch size).
- Grind above ingredients with water and keep it aside.
- Boil all the vegetables with little water and salt.
- Boil until all vegetable get soft then add ground masala.
- Cook it for 2 to 3 minutes then add beaten yogurt cook it 1 or 2 minute.
- Then add coconut oil and curry leaves.
- Now turn off the stove.
- Serve with white rice.Note:
1. If you want heat with coconut oil add mustard and curry leaves then mix it with aviyal.
2. Aviyal is also known as Malayala Aviyal or kerala Aviyal.
