Ingredients:
| Thick Poha (Aval) | -2 cups |
| Onion (chopped) | -1 cup |
| Potato (diced) | -1 cup |
| Green Chili (slit) | -3 to 6 |
| Ginger (grated) | -1 tsp |
| Lemon Juice | -1 tbsp |
| Sugar | -1 tsp |
| Turmeric Powder | -¼ tsp |
| Salt | -to taste |
| Coriander Leaves | -for garnish |
Seasoning:
| Oil | -1 tbsp |
| Mustard Seeds | -1 tsp |
| Cumin Seeds | -1 tsp |
| Asafotida | -¼ tsp |
| Curry Leaves | -few |

- Before Wash Poha
- Onions and Potatoes Cooked
- Poha Added
- Poha Garnished
- Ready to eat!
Method:
- Rinse the poha with water and keep it aside for 15 to 20 minutes.
- Next heat a pan with oil, add the seasonings.
- Then add the onion, green chillies, ginger, potato, turmeric and salt.
- Sauté until the potato gets soft.
- Next add the rinsed poha and cook for 2 minutes.
- Finally add the sugar, coriander leaves and lemon juice.
- Give it a quick toss and turn off the heat.
- Serve it hot as it is or with yoghurt and pickle.
Notes:
- Poha or aval is also known as flattened rice.
- This is a Maharashtrian breakfast specialty.
- For variation, you can replace the potato with pea or vegetable you prefer.
- For extra flavor, you can add roasted peanuts and grated coconut.
