Ingredients:
| Small Potatoes (Halved ) | -15 |
| Onion (big chunks) | -1 |
| Vinegar | -1tbsp |
| Chili Powder | -1tbsp |
| Olive Oil | -2tbsp |
| Coriander leaves (cut) | -1tbsp |
| Mint leaves (cut) | -1tbsp |
| Salt | -to taste |
Method:
- In a large bowl mix all the ingredients.
- Allow it to marinate for half-an-hour to 2 hours.
- Pre-heat the oven to 450F (220C).
- Place the ingredients in to a cookie sheet and spread it out evenly. Drizzle olive oil over the vegetables.
- Then, bake it for 15-20mins.
- Make sure the potatoes for golden-brown.
- You can serve it by itself or with rice.
