Ingredients:
Maida | -1 cup |
Rawa(suji) | -¼ cup |
Baking Soda | -2pinch |
Half and half | -¾ to 1 cup |
Salt | -pinch |
Sugar | -¾ cup |
Water | -1cup |
Saffron | -10 pieces |
Cashew nut (crushed) | -10pieces |
Rose essence | -1drop |
Oil or Ghee | -for frying |
Method:
- Take maida and rawa in a bowl, add pinch salt, baking soda, 2 teaspoon of sugar and half-and-half.e
- Mix like bajji mavu consistency make sure it won’t be very thick batter, add half of the cashew nuts and a pinch of kesari color mix it well and keep it aside.
- Take another vessel add water and sugar, boil it to more than 1 string consistency.
- Add saffron, rose essence and mix it well and turn off the stove.
- Take a pan heat with oil for deep frying.
- Take one deep spoon (Kuzhi karandi) of batter and pour it into a round shape into the hot oil on medium flame.
- Cook it for a minute for both side until golden and remove from the oil.
- Place it on a paper towel and press it flat.
- Now place the flattened malpua into the sugar syrup for 1 minute and take out and place it on a tray.
- Garnish with chopped cashew nuts when it is hot.
- It be served hot or room temperature.
Note:
- Instead of rose essence you can add powder cardamom.
- If you can’t find half-and-half milk, then you can boil 5 cups of milk. Boil it until it get reduce into half its quantity , then let cool it down and mix it with the flour.
