Chinese fried rice

Serving:2 |Type: Rice

Ingredients:

Cooked Rice -1 1/2 cups
Mixed Vegetables (Julienne) -1cup
Garlic minced -1tsp
Ginger minced -1tsp
Dried red chili flakes -1tsp
Green chili -2
Turmeric -1/2tsp
Onion (chopped) -1/2cup
Soy sauce -1tbsp
Vegetarian  oyster sauce -1 ½ tbsp.(optional)
Red chili paste or(chili powder) -1/2tsp
Salt -to taste
Coriander Leaves -2tbsp
Oil -2tbsp
Tomato Ketchup -1tsp

Method:

  1. Cut Mixed vegetables like carrot, beans, cabbage, peas, spring onion, baby corn into Julienne (length-wise).
  2. Half cook the beans in salted water and keep aside.
  3. Take a big pan heat with oil add minced ginger and garlic, it will gives good aroma and sauté well.
  4. Now add onion, green chili, red chili flakes, salt and turmeric fry about 1 minute.
  5. Add carrot, beans, baby corn, peas, spring onion sauté well for 4-5 minutes in medium flame.
  6. Now add chili paste, V. oyster sauce, tomato ketchup mix it well then add cabbage, and red chili paste sauté for 3 minutes. All vegetable should be crunchy, do not over cook.
  7. Then add cooked rice. Mix it well and cook for 3-4 minutes.
  8. Garnish with coriander leaves.
  9. Serve hot with chicken or vegetable kurma or raitha.

Note:

  1. Julienne means cut like thin strips.
  2. Cooked rice should be very flaky, not very sticky.
