Ingredients:
Indian Eggplant | -20 |
Tamarind | Small lime size |
Salt | -3tbsp |
Water | -6 cups |
Method:
- Boil the water until get bubbles.
- Then add all ingredients and let it boil.
- Cook until eggplant get soft not mushy.
- Then drain the water and take out the tamarind.
- Let it dry in the very hot sun.
- For 2 to 3 days.
- Then store it in the air tight container.
- Use it for making sambar or Vatha Kuzhambu.
