Ingredients for Dough:
Idly Rice | -2 cups |
Raw Rice | -1 cup |
Urad Dhal | -½ cup |
Fenugreek Seeds | -1tbsp |
Salt | -1tsp |
Method:
- Soak all the ingredients except salt for 5 to 6 hours.
- Wash nicely then grind like smooth paste.
- Mix with salt then keep it 8 to 10 hours for ferment.
- Now ready to make kuzhi paniyaram, appam and dosai.
Sweet kuzhi Paniyaram
Serving: 4 |Type: snack
Ingredients:
Kuzhi paniyara dough | -2 cups |
Brown Sugar | -½ or ¾ cup |
Cardamom Powder | -¼tsp |
Grated Coconut | -2tsp(optional) |
Ghee | -for frying |
Method:
- Mix everything in a bowl.
- Heat the kuzhi paniyara pan each kuzhi apply ghee and pour spoon full of dough into it.
- Let cook for 1 or 2 minutes then turn it other side let it cook until it gets golden brown.
- Now ready to serve.
Kara Kuzhi Paniyaram
Serving: 2 person| Type: Snack / Tiffin
Ingredients:
Kuzhi paniyara Dough | -2cups |
Onion( Chopped) | -¼ cup |
Green Chili (Chopped) | -2 |
Coriander leaves | -2tbsp |
Curry leaves(chopped) | -few |
Mustard | -1tsp |
Urad Dhal | -1tsp |
Channa Dhal | -1tsp(optional) |
Asafotida | -pinch |
Oil | -1tbsp |
Method:
- Take a pan heat with oil add mustard let it pops up then add both dhals fry it until it gets brown.
- Then add asafetida, onion, chili, curry leaves and coriander leaves sauté for 1 or 2 minutes then mix it with the dough.
- Then do the same as sweet paniyaram.
- Serve with any spicy chutney.
Note:
- You can serve like snack or breakfast.
