Kuzhi Paniyaram(Rice Lentil Donut) / chettinad Kuzhi Paniyaram

Serving:4 |Type: Snack /Tiffin

Ingredients for Dough:

Idly Rice -2 cups
Raw Rice -1 cup
Urad Dhal -½ cup
Fenugreek Seeds -1tbsp
Salt -1tsp

 

Method:

  1. Soak all the ingredients except salt for 5 to 6 hours.
  2. Wash nicely then grind like smooth paste.
  3. Mix with salt then keep it 8 to 10 hours for ferment.
  4. Now ready to make kuzhi paniyaram, appam and dosai.

 

Sweet kuzhi Paniyaram

Serving: 4 |Type: snack

Ingredients:

Kuzhi paniyara dough -2 cups
Brown Sugar -½ or ¾ cup
Cardamom Powder -¼tsp
Grated Coconut -2tsp(optional)
Ghee -for frying

 

Method:

 

 

  1. Mix everything in a bowl.
  2. Heat the kuzhi paniyara pan each kuzhi apply ghee and pour spoon full of dough into it.
  3. Let cook for 1 or 2 minutes then turn it other side let it cook until it gets golden brown.
  4. Now ready to serve.

 

Kara Kuzhi Paniyaram

Serving: 2 person| Type: Snack / Tiffin

Ingredients:

Kuzhi paniyara Dough -2cups
Onion( Chopped) -¼ cup
Green Chili (Chopped) -2
Coriander leaves -2tbsp
Curry leaves(chopped) -few
Mustard -1tsp
Urad Dhal -1tsp
Channa Dhal -1tsp(optional)
Asafotida -pinch
Oil -1tbsp

 

Method:

 

  1. Take a pan heat with oil add mustard let it pops up then add both dhals fry it until it gets brown.
  2. Then add asafetida, onion, chili, curry leaves and coriander leaves sauté for 1 or 2 minutes then mix it with the dough.
  3. Then do the same as sweet paniyaram.
  4. Serve with any spicy chutney.

Note:

  1. You can serve like snack or breakfast.
