Serving: 4| Type: Pasta Soup
Ingredients:
Vegetable Ravioli (Ready Made) |
-20 pieces |
Onion |
-1/2 finely diced |
Tomato Big |
-1 Chopped |
Bell Pepper |
-1/2 finely diced |
Zucchini |
-1 Chopped |
Celery |
-1 stick finely diced |
Garlic |
-2 cloves finely diced |
Spinach |
– Hand full chopped |
Vegetable Stock |
-1 cup |
Chili Flakes |
-1 tbsp |
Chili Powder |
-1tsp |
Water |
-3 to 4 cups |
Salt |
-to taste |
Oil |
-4 tbsp |
Italian Seasoning (optional) |
– 1 tsp |
Method:

Heat a large pan in medium high heat, and add oil.

After the oil has heated, add diced garlic, followed by onions, bell pepper and celery.

Sauté all three until translucent.

Next add the chill flake, tomatoes and salt.

Mix well and close with a lid for 5 – 8 minutes.

Afterward open the lid and mash the cooked tomatoes.

Next add the zucchini and spinach and mix it.

Allow this cook for 2 minutes.
- Next add the Italian seasoning (which is optional), then the chili powder now.

Next add the vegetable stock and the 3 cups of water first.

Allow the liquid to come to a rolling boil.

After the liquid boils, slowing add the ravioli, one at a time.

Then close the soup with a lid and cook for another 6 – 8 minutes.

Then turn off the heat.

Serve the soup hot.
Notes:
1. You use any kind of ravioli, tortellini or pasta.
2. You can add any type of fresh vegetable that you like.
3. You can also make the entire soup with just vegetable stock or used just water.
