Yellow Pumpkin Soup

Serving: 4 | Type: Soups/Rasam

Ingredients:

Butternut Squash(cut) -2cups
Onion(cut) ½ cup
Tomato(cut) 1cup
Green Chili 4 to 6
Coriander Leaves 3tbsp
Salt -to taste
Fresh cream -1tbsp

Method:

  1. Take a pressure cooker add 1tbsp oil sauté everything except cream for 4 to 5 minutes.
  2. Then add 3 cups of water and salt, then let it cook until 2 to 3 whistle comes then turn of the stove.
  3. Let it cool down the cooker, then open it mix it well.
  4. Then blend it with the hand blender, not very smooth.
  5. Not very coarse, then add fresh cream and serve it.
  6. If you want you can add pepper powder.
