Khuska Biryani(Ghee Rice)

Serving: 3 | Type: Veg-Rice

Ingredients:

 

Basmati Rice -1 ½ cup
Onion(chopped) -1cup
Green chili -4 to 6
Coconut milk -1cup
Water -2 or 2 ½ cups
Mint leaves -15(optional)
Coriander Leaves -few
Salt -to taste
Ginger garlic paste -1tbsp

Seasoning:

Oil and ghee -4tbsp
Cumin -1tsp
Clove -4
Cinnamon stick -1 inch
Bay leaves -1

 

Method:

  1. Soak the rice for 10 to 15 minutes and drain the water and keep it aside.
  2. Take a heavy bottom vessel heat with oil and ghee add seasonings fry without burning.
  3. Then add onion , green chili sauté for 1 minute then add ginger garlic paste sauté well .
  4. Now add mint and coriander leaves sauté well then add rice sauté well for 2 or 3 minute.
  5. Then add coconut milk, water and salt cook until it gets boiling then cover with lid.
  6. Now keep it simmer for 10 to 15 minutes then turn off the stove.
  7. Let sit for 15 minutes then mix it well.
  8. Garnish with coriander leaves.
  9. Serve it Raitha or chalna.

Note:

  1. Depending upon your rice you can increase or decrease the water.
  2. You can use half coconut milk and half water.
