Ingredients:
Basmati Rice | -1 ½ cup |
Onion(chopped) | -1cup |
Green chili | -4 to 6 |
Coconut milk | -1cup |
Water | -2 or 2 ½ cups |
Mint leaves | -15(optional) |
Coriander Leaves | -few |
Salt | -to taste |
Ginger garlic paste | -1tbsp |
Seasoning:
Oil and ghee | -4tbsp |
Cumin | -1tsp |
Clove | -4 |
Cinnamon stick | -1 inch |
Bay leaves | -1 |
Method:
- Soak the rice for 10 to 15 minutes and drain the water and keep it aside.
- Take a heavy bottom vessel heat with oil and ghee add seasonings fry without burning.
- Then add onion , green chili sauté for 1 minute then add ginger garlic paste sauté well .
- Now add mint and coriander leaves sauté well then add rice sauté well for 2 or 3 minute.
- Then add coconut milk, water and salt cook until it gets boiling then cover with lid.
- Now keep it simmer for 10 to 15 minutes then turn off the stove.
- Let sit for 15 minutes then mix it well.
- Garnish with coriander leaves.
- Serve it Raitha or chalna.
Note:
- Depending upon your rice you can increase or decrease the water.
- You can use half coconut milk and half water.
