Pav baaji (Potato Gravy with Bread)

Ingredients:

Baaji (Gravy):

Pav or Bread (unsweetened) 8 bread
Potatoes -2 (boiled)
Peas -¼ cup(boiled)
Carrot -1 (boiled)
Cauliflower -¼ cup(boiled)
Onion -1 cup(chopped)
Tomato -¾ cup(chopped)
Bell pepper -¼ cup(chopped)
Green chili -3 (chopped)
Chili powder -½tsp
Turmeric powder -¼tsp
Tamarind paste -1tbsp
Coriander leaves -2tbsp(chopped)
Pav baaji masala -2 or 3tsp
Oil and Ghee -4tbsp
Cumin -½tsp
Asafotida -¼tsp
Garlic(optional) -1(chopped)
Salt -to taste

Toppings:

Onions ½  (finely chopped)
Lemon Juice 1 tsp
Corriender Leaves -¼ cup (finely chopped)

Method:

  1. Boil the first 4 vegetables and mash it well and keep it a side.
  2. Take the pan heat with oil and ghee add cumin, asafoetida and garlic fry for 30 seconds.
  3. Add onion, bell pepper and green chili sauté well for 3 minutes then add tomato, salt and turmeric sauté well until tomato gets mashed.
  4. Now add chili powder and tamarind paste, mix well then add one cup of water and boil it for 5 minutes.
  5. Then add mashed vegetables, cook it for 5 to 10 minutes on medium flame.
  6. Next add pav baaji masala and let it cook for 2 minutes.
  7. Garnish with coriander leaves.
  8. Take the bun (any bread that is not sweet) cut it into half apply ghee or butter toast both sides in the tawa.
  9. Serve with toasted bun and baaji (gravy) with chopped onion, coriander leaves and a splash of lemon juice.

 

Note:

  1. Instead of tamarind you can use amchour powder(dry mango powder).
  2. In U.S  you can use dinner roll instead of bun.
  3. Don’t use sweet buns.
