Shakkaravalli Kizhangu Poriyal (Sweet Potato Fry)

Ingredients:

 

Sweet Potato -1
Salt -to taste
Oil -1tsp
Mustard -1/2tsp
Black Gram Dhal -1/2tsp
Red Chili -1
Curry Leaves -few

Method:

  1. Cut the sweet potato into round thin slices. If it is very big cut them into halves.
  2. Wash it, salt it and add ΒΌ cup of water, boil it in the microwave about 5 minutes.
  3. Cover with a lid when boiling in a microwave. Then remove from the microwave.
  4. Take a pan heat with oil add seasonings, then boiled vegetables cook it 2 minutes.
  5. Turn off the stove.
  6. Serve it hot with rice.

Note:

  1. You can steam the sweet potatoes as whole and then cut it into round shape.
  2. Along with the seasonings you can also add a pinch of asofoetida (perungayam) if you like the flavor.
