Aattukkal Kuzhambu(Goat or Lamb Shank Gravy)

Ingredients:

Aattukkal Cut -400 grams
Thoor dhal(optional) -¼ cup
Onion Diced -1 cup
Garlic Diced -3
Tomato Diced -1 cup
Green chili -2
Chili Powder -1 ½tbsp
Coriander Powder -3tbsp
Turmeric -¼tsp
Coriander Leaves -2tbsp
Salt -to taste
Lemon Juice -1tbsp

Seasonings:

Oil -1tbsp
Cumin -½tsp
Red Chili -2
Sombu(fennel seeds) -½tsp
Kal Pasi(Black stone flower) -1
Star Anise -1
Cinnamon -1 inch
Curry Leaves -few

Method:

  1. Pressure cook all the ingredients except for salt and lemon juice, for 3whistle and then simmer for 15 minutes and turn off the stove.
  2. Cool down the cooker then open it boil for 5 minutes with salt.
  3. Take another pan heat with oil add seasonings fry without burning now add it into the kuzhambu.
  4. Before serving add 1tbsp of lemon juice.
  5. Serve hot with white rice.

Note:

  1. This  gravy can be made in a crock pot (slow cooker), Place all the ingredients in the crock pot with water on high heat and let if cook for approximately 8 hours or until the meat is fall of the bone soft and then fry the seasoning and add it on top of the gravy.
  2. While frying the seasonings you can add ½ diced onion and 1 diced tomato sauté well add it with kuzhambu.
