Baby Corn Broccoli Kurma


Serving: 4 |Type: Veg-Gravy

Ingredients:


Baby Corn(cut) -15 pieces
Broccoli(cut) -5flowrets
Cauliflower(cut) -5flowrets
Potato(cut) -1(small)
Zucchini(cut) -1(small)
Red kidney beans -handful
Peas and carrot -handful
Lima beans -handful
Onion(diced)
Tomato(diced) -1

Seasoning:

Oil -2tbsp
Sombu -½tsp
Cumin -½tsp
Fenugreek -¼tsp
Red Chili -1
Curry Leaves -few
Kal Pasi -few
Cloves -2

Grinding:

Grated Coconut -4tbsp
Sombu -½tsp
Cumin -½tsp
Cloves -2
Cashewnut -15
Khus khus -1tsp
Ginger -1inch
Garlic -5(optional)
Green Chili -3
Red Chili -2

Method:

  1. Grind the above ingredients with water like paste and keep it aside.
  2. Take a bowl add cauliflower and broccoli and cook it in the microwave for 2 minutes and   keep it aside.
  1. Take a heavy bottom vessel heat with oil and add seasonings fry without burning.
  2. Then add onion sauté for 1 minute now add tomato sauté until tomato get mash.
  3. Now add potato, peas &carrot sauté for 3 to 4 minutes with little salt.
  4. Then add lima beans, kidney beans and zucchini cook for 4 to 5 minutes now add ground paste and 2 cup of water.
  5. Mix well and cook it for 2 to 3 minutes then add cooked cauliflower and broccoli.
  6. Then add baby corn cook for 1 minute now check the salt and turn off the stove.
  7. Garnish with coriander leaves.
  8. Serve with roti or rice.
