Malpua(Pancake in Sugar Syrup)

Serving: 15 to 20 Pieces| Type: Sweet/Dessert

Ingredients:


Maida -1 cup
Rawa(suji) -¼ cup
Baking Soda -2pinch
Half and half -¾ to 1 cup
Salt -pinch
Sugar -¾ cup
Water -1cup
Saffron -10 pieces
Cashew nut (crushed) -10pieces
Rose essence -1drop
Oil or Ghee -for frying

Method:

  1. Take maida and rawa  in a bowl, add pinch salt, baking soda, 2 teaspoon of sugar and half-and-half.e
  2. Mix like bajji mavu consistency make sure it won’t be very thick batter, add half of the cashew nuts and a pinch of kesari color mix it well and keep it aside.
  3. Take another vessel add water and sugar, boil it to more than 1 string consistency.
  4. Add saffron, rose essence and mix it well and turn off the stove.
  5. Take a pan heat with oil for deep frying.
  6. Take one deep spoon (Kuzhi karandi) of  batter and pour it into a round shape into the hot oil on medium flame.
  7. Cook it for a minute for both side until golden and remove from the oil.
  8. Place it on a paper towel and press it flat.
  9. Now place the flattened malpua into the sugar syrup for 1 minute and take out and place it on a tray.
  10. Garnish with chopped cashew nuts when it is hot.
  11. It be served hot or room temperature.

Note:

  1. Instead of rose essence you can add powder cardamom.
  2. If you can’t find half-and-half milk, then you can boil 5 cups of milk. Boil it until it get reduce into half its quantity , then let cool it down and mix it with the flour.
