Keerai varuthu aracha kootu(spinach with Roasted coconut Curry)

Serving: 4 | Type: Veg-Side Dish

Ingredients:

Spinach -1bunch
Thoor Dhal(cooked) -½ cup
Turmeric -pinch
Salt -to taste

 

Seasoning:

Coconut Oil -1tbsp
Mustard -1tsp
Urad Dhal -1tsp
 Asafotida -pinch

 

Roast and Grind:

Grated Coconut -2tbsp
Red, Green Chilies each -1
Black Pepper -½tsp
Bengal Gram Dhal -1tbsp
 Urad Dhal -1tsp

 

Method:

  1. Roast the above ingredients  with little oil and grind with ½tsp cumin and water and keep it aside.
  2. Wash and cut the spinach cook it little water and turmeric.
  3. Cook the spinach for 5 minute then add ground paste.
  4. Now boil it for 2 minutes then add cooked dhal boil it 1 or 2 minute then add salt.
  5. Take a pan heat with oil add seasonings fry without burning then add it into the kootu.
  6. Serve with rice.

Note:

  1. Don’t add the salt while cook the spinach at any time, it will spoil the taste.
  2. You have to add the salt at the very end.
  3. If you want you can add the chopped onion while cook the spinach.
