Paal Payasam (Milk Kheer)

Serving: 6-8  | Type: Sweet

Ingredients:

Milk – 5 cups
Basmati rice -1/4 cup
Sugar -1/2 cup
Almond or Cashew -2 Tablespoon

Method:

1. Place milk and rice into a pressure cooker.

2. Wait for 5 to 6 whistles,and then let it simmer for 15 minutes and turn of the stove.

3. Let the cooker cool down and then open it.

4. Turn on the stove to medium heat and reduce the milk until the color changes.

5. Keep stirring the milk occasionally so that the milk does not burn.

6. While the milk is boiling,coarsely chop or grind almond or cashews to your liking.

7. After the milk has changed its color to light brown add the sugar.

8. Boil it for another 5 minutes until the sugar dissolves.Take it off heat.

9. Finish by Garnishing with nuts.

10. Serve hot or cold.

Variations:
1. You can also prepare the payasam in the slow cooker (crock pot). Set your slow cooker to low heat. Add rice and milk.Let it cook slowly for 7 to 8 hours. (Easier if you do it over night). At the very end add the sugar. Then turn off the heat.

2. The payasam can also be made with condensed milk. For 4 cups milk, add 1 tin condensed milk.This will bring the brown color to the payasam. Lessen the sugar, because of the sweetness of the condensed milk.
