Ulutham-Kozhakkatai(Spicy rice dumplings)

Serving: 40 to 50 pieces |Type: Snack


For shell:

Rice Flour -1cup
Water 1cup
Salt -¼tsp
Oil -2tbsp


For Stuffing:

Urad dhal(soaked) -½  cup
Green chili -3 or 4
Salt -to taste

Method for making shell:

  1. Take a vessel boil with water.
  2. Boil until bubble comes up.
  3. Then add salt, oil and rice flour stir it well for 1 to 2 minutes until it’s become a round ball then turn off the stove.
  4. Take that rice dough cover with wet cloth let it sit for 15 to 20 minutes.
  5. Take that dough mix nicely with hand like very smooth dough.
  6. Make small size balls and keep it aside and cover with wet cloth.
  7. Now ready for make the kozhakkatai.

Method for make the stuffing:

  1. Grind all the ingredients given above for stuffing like coarsely with little water .
  2. Take a pan heat with 4tbsp oil add mustard, curry leaves and asafetida fry without burning.
  3. Then add 2tbsp of grated coconut and ground paste.
  4. Cook well for 4or 5 minutes and mix it well.
  5. Cook until it not stick to the bottom(it will take 1 or 2 minute more).
  6. Now ready for make the stuffing.

Method for making kozhakkatai:

  1. Make the small balls from the dough and keep it aside.
  2. Make the small balls from the stuffing.
  3. Apply little oil with your hand take the dough shape like small cup and keep the stuffing inside and close the dough securely, make sure the stuffing won’t come out.
  4. Make the all kozhakkatai and steam it like 15 to 20 minutes in the steamer.
  5. Then serve it.


  1. Use plain raw rice flour(pacharisi mavu).
  2. If you want you can soak the raw rice and grind with water and cook it and use it.
  3. If you don’t have fresh grated coconut you can use dry coconut powder.
