Carrot Thengai Poriyal (Carrot Coconut fry)

Ingredients:

Carrot (cut-small) -4 medium size
Onion chopped -1/4 cup
Green chili -2
Coconut Grated -2tbsp (optional)
Thur Dhal ( Half-cooked) -2tbsp (optional)
Turmeric -1/4tsp (optional)
Salt -to taste

Seasoning:

Mustard -1/2tsp
Urad Dhal -1tsp
Red Chili -1
Curry Leaves -few
Oil -1tbsp

Method:

  1. Heat a pan and add oil, seasonings fry without burning.
  2. Now add onion, green chili, salt and turmeric sauté well in medium flame.
  3. Now add carrot mix well, cover with lid and cook it about 5 minutes on medium flame.
  4. Add cooked dhal and grated coconut stir it well and cook it for 1 minute.
  5. Now turn off the stove.
  6. Serve hot with white rice.
