Kathiri Vathal- Brinjal (Sun dried Eggplant)


Serving: 2 cups | Type: Others / Vathal /Vadam

Indian Eggplant -20
Tamarind Small lime size
Salt -3tbsp
Water -6 cups

  1. Boil the water until get bubbles.
  2. Then add all ingredients and let it boil.
  3. Cook until eggplant get soft not mushy.
  4. Then drain the water and take out the tamarind.
  5. Let it dry in the  very hot sun.
  6. For 2 to 3 days.
  7. Then store it in the air tight container.
  8. Use it for making sambar or Vatha Kuzhambu.
