Kathirikkai Urulaikizhangu Tharakkal (Eggplant Potato Gravy for Breakfast)

Ingredients:

Katharikkai -5(small)
Potato -1(small)
Onion(Diced) -½ cup
Tomato(Diced) -1
Chili Powder -2tsp
Dhaniya Powder -3tsp
Turmeric -pinch
Salt -to taste
Coriander -few

Seasoning:

Oil -2tbsp
Mustard -1tsp
Urad Dhal -½tsp
Sombu -½tsp
Cumin -½tsp
Fenugreek -¼tsp
Red chili -1
Curry Leaves -few

 

Method:

  1. Cut the kathirikkai and potato into diced and put it into the water(otherwise kathirikkai will get black) and keep it aside.
  2. Take a heavy bottom vessel heat with oil then add seasonings fry without burning.
  3. Then add onion sauté for 1 minute then add tomato, pinch salt and turmeric until tomato get mash.
  4. Now add katharikkai and potatoes sauté for4 to 5 minutes then add chili, dhaniya powder mix well.
  5. Now add 2 cups of water cook until all vegetable get soft then turn off the stove.
  6. Garnish with coriander leaves.
  7. Serve with idly or dosa.

 

Note:

  1. You can make this tharakkal in the pressure cooker, follow the above steps 1-4. Then add 2 cups of water and the lock the lip of the pressure cooker and let 1 whistle come and keep it simmer for 2 minutes then turn off the stove.
