Zucchini Kurma (Zucchini in Cashewnut Kurma)

Serving: 3 |Type: Veg-Gravy

 

Ingredients:

Zucchini(Diced) -2
Onion(Chopped) -¼ cup
Tomato(Diced) -1
Chili Powder -1tsp
Salt -to taste
Coriander Leaves -few

 

Grinding:

 

Grated Coconut -3tbsp
Khus khus -1tsp
Cashew nuts -15

 

Seasoning:

Oil -1tbsp
Sombu -½tsp
Fenugreek -¼tsp
Curry leaves -few

Method:

 

  1. Grind the ingredients given above with water and keep it aside.
  2. Take a pan heat with oil add seasoning fry without burning.
  3. Now add onion sauté for 1 minute then add tomato and pinch of salt sauté until tomato get mashed.
  4. Then add chili powder and zucchini sauté for 5 minutes then add remaining salt and ground paste.
  5. Cook it for 3 to 4 minutes (zucchini should be crunchy not mushy) then turn off the stove.
  6. Garnish with coriander leaves.
  7. Serve with rice or roti.
