Kandha Batata Poha (Aval Potato Upma)

Ingredients:

Thick Poha (Aval) -2 cups
Onion (chopped) -1 cup
Potato (diced) -1 cup
Green Chili (slit) -3 to 6
Ginger (grated) -1 tsp
Lemon Juice -1 tbsp
Sugar -1 tsp
Turmeric Powder -¼ tsp
Salt -to taste
Coriander Leaves -for garnish

 

Seasoning:

Oil -1 tbsp
Mustard Seeds -1 tsp
Cumin Seeds -1 tsp
Asafotida -¼ tsp
Curry Leaves -few

 

Method:

  1. Rinse the poha with water and keep it aside for 15 to 20 minutes.
  2. Next heat a pan with oil, add the seasonings.
  3. Then add the onion, green chillies, ginger, potato, turmeric and salt.
  4. Sauté until the potato gets soft.
  5. Next add the rinsed poha and cook for 2 minutes.
  6. Finally add the sugar, coriander leaves and lemon juice.
  7. Give it a quick toss and turn off the heat.
  8. Serve it hot as it is or with yoghurt and pickle.

Notes:

  1. Poha or aval is also known as flattened rice.
  2. This is a Maharashtrian breakfast specialty.
  3. For variation, you can replace the potato with pea or vegetable you prefer.
  4. For extra flavor, you can add roasted peanuts and grated coconut.
